Dry Rubbed Broiled Salmon

Dry Rubbed Broiled Salmon
Ingredients:
- Arawak Farm Dry Rub/Spice Blend #2
- 1 lb. skinless salmon fillet (preferably wild)
- 1 Tbsp. of Dry Ginger
- 1 Tbsp. of Dark Brown Sugar
NOTE: Cut salmon into 4 ounce pieces (serves four). This is a good nutritional size for wild Salmon.

- Marinate salmon with Dry Rub/Spice Blend #2. Coat generously and place in refrigerator for 3-4 hours.
- Prepare broiler to High. Combine Dark Brown sugar and Dry Ginger in a small bowl.
- Place marinated Salmon on rack and ten onto a baking sheet. Sprinkle sugar and ginger mix on top and let the mix melt into the Salmon.
- Place on top rack and broil for five (5) minutes. Be careful to not overcook. Remove from broiler and set aside while you prepare a mixed green salad. Salmon will continue to cook while it is resting.
- Enjoy with a crisp, dry Sauvignon Blanc.
