Serves: 4-6

Prep:

  • 1 small (personal size) watermelon, peeled, cut into cubes
  • 1 English cucumber, cubed
  • 15 fresh basil leaves, torn
  • 1/2 cup crumbled feta cheese

HONEY VINAIGRETTE

  • 1/4 cup light olive oil
  • 2 tbsp balsamic vinegar
  • 2tbsp fresh lime juice
  • 2 tbsp honey
  • 1 tsp Dry Rub & Spice Blend #2
  • 1/2 tsp freshly ground black pepper

METHOD

In a large bowl, mix all salad ingredients except feta.

In a small bowl, whisk together the Honey Vinaigrette.

Gently toss salad and vinaigrette together.

Top with feta cheese and serve
